Happy Wednesday. It’s been a while since I’ve done a What I Ate Wednesday. The week is going by fast and I’m happy it’s midweek. My boss is having all of us at the clinic over for dinner tonight, which is a nice mid week treat. He is an amazing cook and you can bet there will be copious amounts of wine for hump day.

It’s not that I avoided them but they just didn’t happen much and now that I’m back in my routine and habitat, I’ve been craving them hard core. That’s how intuitive eating works – your body tells you what it really wants. The goal is to listen to it more times than you ignore it. No one is a 100% intuitive eater, because intuitive eating is always a work in progress. It’s a continual learning process of curiosity, and trying to honor where you are.
It was nice to get back to my regular breakfast bowl of oatmeal with the usual suspect toppings – bluebs, yogurt, chia seeds and peanut butter. Sometimes I add a splash of maple syrup. And often times, I add some cereal for some crunch.
Lunch was supposed to be a leftover stirfry I made. I combined TJ’s cauliflower rice with quinoa, and added broccoli, onions, zucchini and tempeh. I marinated the tempeh in some balsamic vinegar, honey, soy sauce, and garlic. Next time I need to measure because the amounts were off. I also topped it with barbecue sauce because that’s my favorite way to eat tempeh. Have you tried it? It’ll change your life. This is what it should have looked like…
Anyway, I was so excited to eat it! And then, I spilled it on the floor at work.
Womp womp. So change of plans – I headed to the Whole Foods hot bar and ended up with a turkey burger, sweet potatoes and some salad.
I snuck outside for a quick break to enjoy some fruit and Vitamin D. I’m so into mango right now – and Trader Joe’s has it precut. Win. Sidenote – both mango AND strawberries are high in Vitamin C, so hopefully my skin and immune system are thanking me for these snacks this week.
One of my clients brought me in some homemade bread because she’s super sweet. So, it served as the perfect afternoon snack before my 6:30pm client. She said it was a banana bread made with coconut and almond flour, and it is delicious! Thank you 🙂
Dinner was an easy mix of pasta (the rest of a lentil pasta box plus some rigatoni with spinach, kale, chicken sausage and cheese. And we didn’t have any pasta sauce on hand, so I used tomato soup. I can’t eat pasta without sauce – that’s like blasphemy so it was the best I could do at the time. It wasn’t that bad actually. Anyone else ever have to improvise as so?
Followed by some dark chocolate and popcorn, which has become a new favorite nighttime snack duo. You won’t hear me complaining.
