When I think of Christmas cookies, I definitely don’t typically think of oatmeal peppermint cookies, but these have totally changed my mind.

Chocolate and peppermint – yes! But, peppermint oatmeal deserves a place on the table. These are so good you’ll want to add them to your cookie exchange list.

Now, I’m ready for the fun winter flavors, like peppermint, gingerbread, cranberries and pomegranate, which are all abundance in Christmas recipes.

These roasted brussel sprouts and carrots and gingerbread oatmeal are my holiday go-to’s.

Cookies don’t typically last long in my house, especially if they are oatmeal mint cookies. Just two of our favorite flavors blended together.

Like these leftover oatmeal cookies, these are soft and fun with add in’s, like peppermint and raisins.

I think cookies are actually a wonderful snack. Rather than looking at them as miniature sugar bombs (boo- what a buzzkill), I see them as the perfect vehicles for carbohydrates and fats, both of which are important for my pregnancy mindset and satiety.

I am always promoting honoring hunger, nothing changes now!

Peppermint is really only a flavor I crave in the winter months. I don’t know if it’s the marketing, but they sure do a good job of making that flavor sound appealing when Christmas wreaths come into season.

These peppermint oatmeal cookies are very appealing. And the raisins add the perfect chewy factor.

I’m a huge fan of raisins in general, but especially raisins in cookies.

Minty, but not too minty. Chocolate-y. Chewy and raisin-y. It really is the perfect combination for this whole wheat oatmeal raisin cookie recipe. 

Ingredients for Oatmeal Peppermint Cookies

These oatmeal mint cookies use less sugar than many other cookie recipes I’ve tried. Mainly because the raisins provide some sweetness themselves.

Here’s what you need!

  • coconut oil, slightly melted
  • coconut sugar
  • egg
  • peppermint extract 
  • whole wheat flour
  • oats
  • baking soda
  • sea salt
  • raisins
  • chopped mints 

I used coconut sugar, but you could also use brown sugar for a more molasses-y taste.

These peppermint oatmeal cookies are the perfect amount of “minty” with everything else going on with them.

How to Make Easy Peppermint Cookies

These easy peppermint cookies will make you feel like a pro in the kitchen!

  • Preheat your oven to 350 and line your baking sheet.
  • Mix your wet and dry ingredients, and then mix them.
  • Roll the dough into 12 small balls and place on the cooking sheet.
  • Then, you’ll bake for 10-12 minutes. So easy!

These easy homemade peppermint cookies are my favorite option to bring to loved ones and/or holiday gatherings, because they are just a little bit out of the norm!

People typically think chocolate and peppermint, but not oatmeal peppermint cookies!

I’m already looking forward to the holiday Christmas cookie exchanges because I always come home with the most creative combinations.

Some other cookies that we love, even though they aren’t holiday-ish, are coconut flour oatmeal cookies and pumpkin no bake cookies.

Total Time 32 minutes

Ingredients

  • ½ cup coconut oil, slightly melted
  • ½ cup coconut sugar
  • 1 egg
  • ½ tsp peppermint extract (or 1 tsp vanilla extract if want less mint)
  • ¾ cup whole wheat flour
  • 1 cup oats
  • ½ tsp baking soda
  • ¼ tsp sea salt
  • ½ cup Sunmaid raisins
  • ¼ cup chopped mints (I used Andeys)

Instructions

  1. Preheat oven to 350 degrees. Line cookie sheet with parchment paper or grease with butter and set aside.
  2. Mix coconut oil and sugar until combined. Add egg and peppermint extract.
  3. In a large bowl, whisk the dry ingredients - flour, oats, baking soda and salt.
  4. Mix wet and dry ingredients until fully mixed, adding in raisins and chopped mints last.
  5. Roll dough into small balls and place on cookie sheets.
  6. Bake for 10-12 minutes, or until edges turn slightly golden
  7. Cool on a wire rack or for 10 minutes before eating.

  3. Alllll I’ve wanted in these past two weeks has been peppermint. Chocolate peppermint. Seriously, the christmas flavor cravings have hit me hard this year. Peppermint mochas. Peppermint hot chocolates. I’m basically pinning every peppermint brownie I see pop up on pinterest. So these are great. I’ve never seen anyone do the raisin and peppermint combo before. Interesting!
