Hi friends! How’s your week going?
I got rear ended yesterday. Luckily, no one was hurt so I’m just dealing with that whole process with my car. The snow is starting to melt here in Charlotte though and we have a forecast of mid 60’s the rest of the week. Psyched! I’m linking up with the crew today to share my eats from yesterday!
For breakfast, I had a slice of my blueberry sweet potato bread slathered in peanut butter. Okay, two slices. Based on my post last week, I know what you’re thinking – where’s the rest of your protein?
Great question! I also had some greek yogurt with PB2, sunflower seeds and chia seeds on the side.
It was such a busy morning with clients working through my morning snack that I forgot to snag a picture but it was string cheese and an apple. The classic.
I love when I have some extra time for lunch, especially to make it both pretty AND tasty! I try to schedule clients in the morning and night when I can, so I can come home for lunch and let Tater out. It doesn’t always happen that way but when it does, it’s great!
As seen on instagram, I went with some avocado toast and a banana peanut butter toast combo, both topped with pumpkin seeds and hemp seeds. And two hard boiled eggs on the side. I also added more chickpeas over a side salad.
After lunch, it was back to the office for a few more clients. I have far fewer male than female clients, but I met with a few new male clients which was exciting! We talked sports nutrition and running, and healthy eating during the school day. I guess I never realized that teachers’ have such a restricted eating schedule – some of them eat lunch at 10:30! For me, that would translate to two lunches. I think we came up with some good solutions.

I still came home for dinner, starving as usual. After learning the hard way last week and eating out multiple times since I didn’t meal prep, I kicked butt on Sunday with some meal prep. I followed this recipe and improvised with some of the spices.
So, dinner was leftovers. I bowled it up with some baked potato. Man, I love sweet potatoes, but the regular old spud is delicious every now and then. Not to be forgotten!
Post dinner: I always have a little sweet treat. I mixed cookies ‘n cream ice cream with (more) sweet potato bread because it’s amazing, and some cool whip. What dreams are made of, friends.
