Crispy Tuna Veggie Sliders

Hi, friends! You all are in for a treat today. I know many of us are getting SNOW right now, so please be safe. Not only is it Friday, but I also have a super easy, nutritious and delicious recipe to share with you!

I’m really into energy/oat/protein balls right now. They’re perfectly portable, tasty, and nutrient-dense, depending on what you add to them. You can pretty much add anything you want to them. As I was popping one after another into my mouth, I had an epiphany that why not make these with some sort of real food protein, so they’re like meatballs.

How Do You Like Your Tuna?

I have tonss of canned tuna, and while I love a good tuna fish sandwich, I’m often hesitant to just eat tuna straight up. I’ll usually throw it in some pasta or something, or add it to quinoa/rice, but why not make some little cutesie tuna meatballs to throw atop salads, or mix in with veggie dishes? Or, better yet, throw them over some ZOODLES.

I still need to make zoodles, but I don’t have a spiralizer, so that makes things tough. I have lots of recipes pinned for when I get one. (Update: I bought this one and totally worth the $8.00!)

Back to the tuna meatballs. They take only about 20 minutes, from start to finish. Once you have your ingredients chopped, you simply roll them into balls and cook them on the stove over medium-high heat, for about 5 minutes on each side.

They have a pleasant little crunch as I opted for a nutritious almond meal over breadcrumbs. Almond meal has protein and healthy fat, and we know I’m all about the fats, bout the fats, no secrets.

They also have some tasty little bulk from the veggies I snuck in there. These guys will be your best friends!

YOU GUY, THESE ARE SO GOOD.

They are actually really filling too. Aside from the 20 grams of protein in a can of tuna, you get an additional 10 grams of protein from the almond meal itself, plus it’s a great source of fiber, which many of us don’t get enough of.

I ate mine with some tomato sauce (favoriteee) alongside a sweet potato with butter and cinnamon, and some greens for a perfectly complete, balanced meal that was gone in approx. 3.5 seconds. Next up is to make this in bulk for meal prep, or to freeze for later. Dare I say these may be some perfect appetizers for the football games? Well…I said it!

    1. Hi Laura! In this case, yes I think you could substitute! Almond flour may be a little lighter or fluffier, in which case you could add a tsp of breadcrumbs or even oats (GF oats if you are GF) to thicken it up a tad!

        1. Hi Laura – I honestly don’t know what happened to the recipe. I’m seeing what you’re seeing. It must have gotten “lost” when I switched recipe plugins. I’m doing some digging to see if I can find it and will let you know.
